Since the baking industry has moved towards line production in stead of running a traditional bakery, there has been a analogous shift in the way baking is practiced and the technology is engaged. In nearly all European countries, the line production of baked products is increasing, while the number of traditional craft bakeries is declining. The market share of line production is currently in the vicinity of 80% in the UK, 40% in Germany – and it’s rising. Following a time lag (due to a highly fragmented retail sector in the past) the same process can now be observed in southern European countries.

MacAdams has been a leader in the baking industry for more than a century. We’ve seen baking equipment evolve from wood fired bakeries to gas bakeries and hand operated ovens to automated ovens.
